"Before I knew it, I was doing half my business in food," she said.
Dusseau is flexing her inner foodie even more with a new venture, a fine dining restaurant called Cafe One24 that opened Wednesday on the east side of Brookfield.
It's located in the same complex that houses Culver's and Chipotle Mexican Grill at 3705 N. 124th St., just south of Capitol Drive. The restaurant owner is Renee Shecterle, who is an investor in the Menomonee Falls-based Fit Food Trainer with her husband Brian who operates the Culver's.
Cafe One24 touts itself as Milwaukee's first "clean restaurant," offering "fresh and clean" organic and gluten-free dishes. Its Facebook page says ingredients have "no preservatives, no animal fat, no processing, no bleaching and no pesticides! Eat like mother nature intended — fresh and clean!"
But stripping away non-nature ingredients doesn't strip away the taste. The opposite is the case, she said, adding fresh produce and organic meat offer great flavors.
"I'm excited," Dusseau said, chatting in the wine bar Thursday after handling arrangements for a grass-fed beef order. "I'm always been passionate about food."
The organic and gourmet menu includes main entrees, sandwiches and burgers, soups, salads, breads, cheeses and appetizers. Item range from an $8 Portabello Mushroom sandwich and $11 Blackened Tilapia Po’Boy to main dishes such as $13 Butternut Squash Ravioli and $23 Seared Scallops.
Dusseau prepares food with products from partners such as Cybros Sprouted Bakehouse, Empire Fish, Growing Power, The WI Grass Fed Beef Co-op, and The Local Wisconsin Dairy Farmers.
The Cafe One24 menu items are different from the daily meals and snacks she sells at Fit Food Trainer, where take-home products "need to be able to reheat easily," she said. But she uses many of the same staples such as organic chicken and grass-fed beef.
Cafe One24 is open for dinner only, and reservations are accepted.
