Summer Snacks

Summer recipes that are quick, easy and delicious!

During the winter meals are easy; anything warm hits the spot, and chili and soup are easy go-tos. In the heat of the summer (or at least the above freezing temps here in WI) things get a little trickier.

Here are a few of my favorite summer recipes:

Chicken Salad
2 cans chicken meat
1 can medium pitted black olives
1 cup mayo
1 box rotini pasta
cubed cheddar cheese if desired
salt & pepper

Cook pasta as box directs. Meanwhile mix chicken and mayo in large bowl, cutting chicken in to smaller pieces. Drain black olives. When pasta is finished cooking mix everything in large bowl and refrigerate.  
— I also like McCormick's "Garlic & Herb" Salt Free Seasoning with this chicken salad.


Packer Pasta Salad
2 boxes medium pasta shells
1 bag frozen sweet peas
1 bag frozen corn
1 bottle Italian dressing

Cook pasta, corn and sweet peas as directions advise. Mix in large bowl and mix in Italian dressing.
— This is also one of my favorite dishes to bring to Packers games!


Beer Dip
1 8 oz package sour cream
2 blocks cream cheese
1 bag fancy shredded cheddar cheese
1 package ranch dressing
1 bag pretzels
-beer (if desired) 

Mix cream cheese and sour cream until smooth. Add shredded cheese and half package of ranch dressing. Add more ranch dressing if desired. Enjoy with pretzels.
— Add beer to taste, if desired. 


Olive Dip
1 can black olives
1 can green olives (and juice)
2 packages cream cheese
1 box Triscuit crackers

Drain black olives. In food processor mix cream cheese until smooth. Mix in black olives and green olives. Pour a little green olive juice in for taste and to keep smooth.


Snicker Surprise
1 small package vanilla instant pudding
2 cups milk
1 8 oz container Cool Whip
3 granny smith apples, cubed
3 large Snickers bars, cubed into bite-size pieces

Make vanilla pudding according to directions. Fold in cool whip. Mix in apples and Snickers.

Taco Dip 
1 package cream cheese
1 8 oz container sour cream
1 package taco seasoning
toppings (shredded taco cheese, onions, chopped black olives, etc)

Mix cream cheese and sour cream together until smooth. Mix in taco seasoning. Spread on plate, top with cheese and other toppings.
