Where There's Smoke, There's Firehouse

New sub shop serves up community involvement on the menu along with food fit for a firefighter.

When you step into Firehouse Subs just over the border in Elm Grove at 15280 W. Bluemound Road, you realize it's aptly named, as a smoky aroma is one of the first things you notice. "That would be the beef brisket," said Eric Erwin, a representative with the sandwich chain. "We have it smoked and shipped to our stores, where it's sliced fresh." The process of making the sub sandwiches also involves steaming, which Erwin and store owner Sara Benedetto say help to release the flavor while keeping the meat moist. New Sub Shop Honors Legacy of Fire Fighters

Firehouse Subs will open Tuesday as the first in the area, and will feature Brookfield and Elm Grove Fire Department memorabilia.

Firehouse Subs will hold the grand opening of its first restaurant in Wisconsin on Tuesday, at 15280 W. Bluemound Road. The Elm Grove restaurant is the first of 42 with expansion plans throughout the Milwaukee, Green Bay, Madison, Eau Claire and Rockford, IL areas. The restaurant's claim to fame includes steaming its premium meats and cheeses atop toasted sub rolls and served with fresh produce. However, the authentic firehouse setting, which is based on the founding family’s decades of fire and police service, perhaps distinguish the setting from other similar chains.
