ReplyWhat am I missing here? Was Walker Governor in 2008 too? I can't remember a time when the library wasn't making cuts because of financial woes.

I'm making my bread and buns this way too. No more kneading by hand. My hands just couldn't take it anymore.

ReplyI now use my Kitchenaid stand mixer because of arthritis in my hands. I put the flour and salt into the bowl, turn the mixer on low and start putting approximately 1" pieces into the bowl. I use the regular attachment, not the dough hook. I mix until it is almost like corn meal. There may be some pieces that don't get ground but those I either break up with my fingers or just roll them into the dough. I then start adding my water/egg mixer slowly and mix/add until the dough pulls away from the sides and stop. I do not over mix, nor over roll it out. I am sure using a food processor with this same method would work just as well. I don't use mine because the stand mixer is easier to clean.

ReplyI have never bought a pie crust. I have always used my mother's recipe which consists of flour, shortening, salt and egg. I prefer real butter as the shortening. Too many of the shortenings are now soy. I have used Palm shortening which gives the crust a different taste.
I used to go through all that manual labor but now that my hands are arthritic I use my kitchen aid mixer for the whole process. My son uses the same recipe for pasties.
The more you overwork the dough either mixing or rolling, the tougher it gets.

What computer totals? The books have to equal the ballot machine and that can take time. There is much to be done after the polls close to process the ballots.

What a staged photo. The kid is using cursive on a tablet. And such beautiful hand writing to boot. I thought cursive writing was a thing of the past.
